Ok, so maybe you've never found yourself with too much tequila on the shelf. (I mean, if you do, then I'd be happy to relieve you of your burden). But if you're anything like me, then it's likely you've come across a nearly forgotten avocado or two teetering dangerously on the verge of overripe in the deep, dark recesses of your refrigerator. "Oh yeah! I was gonna make guacamole!"you say. But alas, when you reach for the bag of chips in the cupboard you discover that someone has eaten all but three and then placed the bag back in the hopes of avoiding the "ate the last of the chips" guilt. Probably you. dammit.
While you contemplate the list of possible culprits (you. husband. the dog.) just go ahead and grab a blender. By the time you're done with this, you won't even remember the chip incident. Unfortunately, you probably won't remember to buy chips either, but that's your cross and you're just going to have to bear it.
So, what to do with those rogue avocados and all that extra tequila? AVOCADO MARGARITAS! I know, it sounds weird. But trust me. The avocados make the cocktail smooth and creamy without making it taste all avocado-y.

- 1 ripe avocado- peeled and pitted
- 4 oz. tequila
- 2 oz. Cointreau
- 2 oz. lime juice (fresh is best!)
- 1/4 cup cilantro
- 2 cups ice
- pinch of salt
- 1-3 tsp. agave nectar
- sliced jalapeno
Blend avocado, tequila, Cointreau, lime juice, cilantro, ice, and agave with a 1-3 slices of jalapeno. Taste and add agave and jalapeno to preference! Puree until smooth.
Serve in frozen coupes rimmed with salt (optional). Garnish with lime wedge, jalapeno slices, or whathaveyou!
